Braaied Pavlova Cake

A braaied pavlova cake is a simple dessert that you can make this Mother’s Day, guaranteed to be a showstopper with its symphony of decadent flavours.

                                                                                                                                                   Braaied Pavlova Cake
                                                                                                                                            TIME: 40 minutes | SERVES 8

INGREDIENTS

135 g any store bought pavlova

300 g fresh figs

125 g Forage And Feast Salted Peanut Butter & Chocolate Drizzled Popcorn

For the caramelised roasted pecan nuts

250 g pecan nuts

2 tablespoons of brown sugar

tablespoon of white wine (or water)

A pinch of salt

For the filling

250 g Forage And Feast Ricotta Soft Cheese Tub

250 g cream cheese, room temperature

170 g Forage And Feast Cranberry & Fig Cheese Topper

2 Tablespoons of blue cheese (optional, add more to taste and preference)

METHOD

For the caramelised roasted pecan nuts

Preheat the oven to 180℃. In a bowl, mix the pecans with the brown sugar and a pinch of salt – the salt adds flavour to the sweetness. 

After mixing, add a tablespoon of white wine and mix thoroughly. Make sure all the nuts are covered and coated. 

Place the pecans on a baking tray, making sure there is enough space between them.

Roast them in the oven for about 20 minutes. Keep checking on them.

For the filling 

Mix together the ricotta, cream cheese, and blue cheese in a mixing bowl until you achieve a smooth texture. 

Then, add half of the bottle of Forage And Feast Cranberry & Fig Cheese Topper into the mixture. You can add more of the topper if you prefer a sweeter taste. Place the mixture in the fridge until you’re ready to use it. 

For the figs

Place the figs in a pan and add two tablespoons of the cheese topper. Heat on high on the stove until the figs are sizzling. Remove and place on the side. 

For the pavlova

Carefully place the pavlova on the grid and braai until the bottom and top edges start to become golden brown. The smokey flavour will enhance the sweetness. 

To assemble

After braaing the pavlova, mix a cup of slightly crushed roasted pecans into the cream cheese filling and use the rest of the nuts as garnish.

Gently scoop the mixture into the braaied pavlova. Now, place the figs, nuts, and the Forage And Feast Salted Peanut Butter & Chocolate Drizzled Popcorn on top. Don’t be shy, stack them as a tower. If you have any fresh figs left, cut them open and place them as additional garnish. And there you have it, a braaied pavlova cake, a special dessert to honor all the mother figures in your life.
