SPICY CAULIFLOWER BITES

Most of the time, the conundrum we face with putting together a snack platter – whether for a family get-together or just something to nibble on while saving your appetite for dinner – is that it’s always a toss-up between buying the whole thing pre-made and prepackaged (where’s the love?!), and spending an hour or two online rummaging around for something new and interesting to throw together in the hope that the recipe works. Well, here’s something to add to your repertoire that’s sure to raise a few eyebrows – but totally in a good way. Imagine buffalo wings… but made of cauliflower and a light, crispy panko shell. It’s not likely to spoil any appetites for the main event, but it more than satisfies that little pang of hunger you’ve been building up since this breakfast. Just perfect for that Saturday afternoon TV binge or a snack to whip up when your nearest and dearest swing by for a visit.

INGREDIENTS

for the cauliflower

4 baby cauliflowers (about 1,2 kg)
3 eggs
100 g Panko breadcrumbs
20 ml Cape Herb & Spice Smoked Paprika
100 g parmesan cheese, finely grated

for the sauce
250 ml tomato sauce
15 ml Cape Herb & Spice Chipotle Chilli (or to taste)
30 ml soy sauce
30 ml white wine vinegar
90 ml Worcestershire sauce
1 garlic clove, finely chopped
for the yoghurt dipping sauce

250 ml Greek-style yoghurt
15 g fresh coriander, finely chopped
15 ml lemon juice
15 ml finely grated lemon zest
1 garlic clove, finely chopped
Freshly ground Cape Herb & Spice Atlantic Sea Salt & Extra bold black pepper 

METHOD

for the cauliflower

Heat the oven to 180 °C. Break the cauliflower into bite-sized pieces.
Beat the eggs together in one bowl, then mix the breadcrumbs, paprika and parmesan cheese together in another. Dip the cauliflower into the egg mixture, coating it well. Take it out and immediately roll the cauliflower in the breadcrumb mixture before placing each piece in an oven dish lined with baking paper.
Bake in the oven for 15 minutes.

for the sauce

Mix all the ingredients together in a mixing bowl.
Once you have taken the cauliflower out of the oven, pour the sauce over it and put it back in the oven for another 5 minutes. While you wait, make the yoghurt dipping sauce.
for the yogurt dipping sauce

Mix all the ingredients together and serve with the cauliflower bites.
