Copper Cannelé Moulds
Cannelés are one of my greatest guilty pleasures. If you’ve never had the pleasure, think of a gooey, custardy centre encased in a crispy, slightly burnt shell of caramel. Need I say more?
You’ll find them at most patisseries in France, where it’s just so easy to buy three too many – but I seldom have any left over. So, while visiting Paris during the making of JAN the Journal Volume 5, I brought back only 24 of these beautiful cannelé moulds. I’ve tried all kinds, including the silicone variety, but you simply don’t get the same result.
