Through a carefully curated collection of over 50 recipes, which have been developed, tested and retested by van der Westhuizen and his culinary team at JAN Innovation Studio – and an array of articles, travelogues and guides – the book takes the reader on a unique tour of France, while remaining conscious of the challenges we face on a global scale.
Starting in van der Westhuizen’s adopted home town of Nice, we journey westwards to the ancient port city of Marseille, continuing on with an exploration of the culinary riches of Toulouse and the Southwest, eventually ending up in Paris, where we discover the French Capital in a whole new light, complete with a gastronomic shopping guide and an ode to the chef’s grandmother Maria’s “fancier”, French-inspired dishes.
But no volume of JAN the Journal would be complete without a celebration of South Africa and its diverse culinary heritage. Woven into its pages, the inspiration Jan Hendrik finds in his home country is evident from the opening pages with a mesmerising sequence, captured by van der Westhuizen himself in Paternoster, where he spent several weeks in lockdown.
