To make a Spanspek Simple Syrup, In a small saucepan, bring 250 ml of water and 250g castor sugar to a boil. Let boil for 2 minutes, remove from heat, and let cool completely. Once cooled, add to a blender or food processor with 500g of spanspek cubes or balls and 50g of fresh mint. Blend until completely smooth.
To make the drink, add ice to a cocktail shaker along with fresh mint leaves, add the spanspek simple syrup and 45ml of The Botanist Gin and shake for 30 seconds. Fill glass with ice, a few spanspek melon balls, fresh mint leaves and cucumber slices, and then fine strain into the glass, top with the sparkling cucumber and ginger, and garnish with mint leaves and cucumber ribbon.
