Celebrating 50 years of Steri Stumpie

Nothing takes me back to the happy days of my childhood like a nostalgic tasty treat, and there are some South African staples that always make me feel like a kid no matter my age. One of my favourites? South Africa’s favourite flavoured milk – Steri Stumpie!

I’m a sucker for the selection of variations you can find on the shelf and their playful colours and delicious flavours have enticed me to get creative with them in the kitchen. Because why should playfulness be limited to our adolescence? Earlier this year I shared my recipe for Steri Stumpie pancakes in a one of my live masterclass demos and I was blown away by the crowd’s response, especially since it’s as easy as greasing a heated pan with cooking spray, and pouring in chocolate-flavoured Steri Stumpie, letting it reduce. Et voilà – delicious!

One thing led to another and now I’m thrilled to be joining in Steri Stumpie’s iconic 50th birthday ‘Steribration’ with a birthday cake made JAN-style, aka with rich and creamy ganache inspired by some of Steri Stumpie’s most iconic flavours.

Steri Stumpie Chocolate Cake

Cooking Time: 1 hour + 4 hours for setting the ganache | Serves: 6-8

INGREDIENTS

for the steri stumpi dark chocolate ganache

300 ml Chocolate Steri Stumpie

350 g dark chocolate

for the strawberry steri stumpie ganache

150 ml Strawberry Steri Stumpie

150 g white chocolate

for the cream soda steri stumpie ganache

200 ml Cream Soda Steri Stumpie

200 g white chocolate

for the bubble gum steri stumpie ganache

200 ml Bubble Gum Steri Stumpie

200 g white chocolate

for the vanilla steri stumpie ganache

200 ml Vanilla Steri Stumpie

200 g white chocolate

for the chocolate cake

300 g caster sugar

4 eggs

250ml Chocolate Steri Stumpie

125 ml sunflower or canola

250 g cake flour

15 ml baking powder

5 ml salt

50g cocoa powder

15 ml vanilla essence

METHOD

for the chocolate cake

Preheat your oven to 180°C. Prepare two 18 cm springform cake tins by lining the bottoms with baking paper circles cut out to fit the bottoms exactly then spray the entire pan with non-stick spray.

Separate the eggs and whisk the egg whites and sugar to make meringue and set aside.

In a small pot bring the Steri Stumpie to simmer. Remove from heat and whisk in with oil. Leave to cool slightly before whisking in the cocoa powder, ensuring there are no lumps. Whisk the egg yolk inside the mixture making sure it doesn’t curdle. Add mixture to a large bowl and add the dry ingredients, once mixed through, gently fold in the meringue. Bake for 35-40 minutes.

Roughly chop the chocolate and add to a mixing bowl. In a small pot bring the Steri Stumpie to a boil and remove from heat. Whisk the warm Steri Stumpie into the chocolate until melted, place in the fridge to cool down for 3 – 4 hours.

Cover the cake with the dark chocolate ganache and place In the fridge to set before adding the remaining ganache to garnish the cake.
