FINDING INSPIRATION
As a chef and artist, where do you typically find inspiration for your culinary creations and life as a whole?
Inspiration. It’s the word we all crave. It’s also the word that we dry up so quickly of, we find it in the cracks of our life, I think … And just when you think you have nothing around you, that’s probably when you get the biggest inspiration. But for me, your well-being plays an important role. To eat well, sleep well, and drink well. It’s spending time with friends. Inspiration comes in the strangest ways.
PERSONAL ASPIRATIONS
What are some of your personal aspirations as a chef, and how do you nurture and pursue them in your culinary journey?
I guess the biggest one is to document everything I do. I love to document, and since my young days as a chef, I used to take pictures of my work and keep it.
And I love journals and journaling and scrubbing ideas. To have a mark and leave something behind in a tactile way. I guess that is my purpose in life.

BEING A SOURCE OF INSPIRATION
You’ve become an inspiration to many aspiring chefs and food enthusiasts. How do you approach the responsibility of being a source of inspiration for others?
I know there are a lot of young chefs who admire what I do and what my team do. At the end of the day, it’s done with integrity. We are not doing it to be famous or to get more Instagram Likes. We are doing it because we love it. It’s communication, and it all ties into what I do, even as an artist, I communicate. So, it must have an effect on people, and if it doesn’t, then I’m not doing what I love right.
