Condensed Milk, Apple and Almond Cake

If you grew up on condensed milk, you’ll get it. There’s just something so nostalgic about that milky caramel taste that puts me in the best frame of mind – and gets my creative juices flowing. This apple cake is inspired by a quick-and-easy version my mother used to bake, but in this version, the sweet treat essentially replaces the milk and sugar, resulting in a rich and moist crumb that needs nothing else, except perhaps a tasteful apple garnish.

NESTLÉ SWEETENED CONDENSED MILK, APPLE AND ALMOND CAKE

TIME: 1½ hours | SERVES: 6 – 8

INGREDIENTS

4 – 5 red apples, thinly sliced

125 g (135 ml) butter, melted

3 eggs

2 x 385 g Nestlé Sweetened Condensed Milk

225 g (400 ml) self-raising flour

100 g flaked almonds 

METHOD

Heat the oven to 170 °C. Line the base of a 20 cm springform pan with baking paper. Spray the tin with edible food spray. Arrange the sliced apples around the edge of the tin. Whisk the melted butter and eggs together. Add the condensed milk and whisk till well mixed. Add the flour and almonds and whisk until well mixed. Pour the cake batter on top of the apples and place in the oven. Bake for 1 ½ hours. Let the cake cool in the tin for 20 minutes before carefully turning it out. Once the cake is cooled garnish with very thinly sliced apple on top. Serve with ideal milk, cream or ice cream.
