No other ingredient has had a greater impact on cooking than salt. Apart from amplifying flavour, it also alters the texture of a dish, reduces bitterness and balances sweetness. I’ve infused this special JAN-inspired salt with my own Bouquet Garni blend of dried parsley, thyme and bay leaf, and although the blend is usually kept in a muslin cloth, which is later removed, this herbaceous salt mix is perfect for rubbing into meats, like short ribs and beef fillet, using in a mouthwatering soup or confit dish, especially the combination of aubergine and garlic, or simply sprinkling over any savoury dish you think could do with a distinctly French touch. My salt blend also comes beautifully packaged in a specially designed, white linen drawstring bag.
