THREE PEA SALAD with steamed asparagus, feta and pink peppercorns in a basil pesto dressing
For the salad, toss together:
1 packet fresh peas, mange tout and sugar snap peas, washed and trimmed
1 punnet asparagus, trimmed and steamed until just cooked
1 handful fresh mint, roughly chopped
Greek feta, broken into chunks
crushed pink peppercorns
sunflower seeds
For the Basil Pesto and White Balsamic Dressing, mix together:
120 ml basil pesto
30 ml olive oil
40 ml sweet white balsamic vinegar
salt and freshly ground pepper
Place all the dressing ingredients in a jar, close the lid and shake well until mixed. Season to taste. Drizzle over Pea Salad and toss. Serve with Koelenbosch Pinotage Rose MCC 2022.
