Every remarkable restaurant begins long before the first guest walks through the door. It starts with a vision. For me, over a decade and five restaurants later, creating a restaurant has never been about following trends, it’s about creating a feeling. The warm glow of candlelight, delicate glassware, crisp linen napkins, vintage cutlery and soft music are never simply decorative details, they are the foundations of an experience that invites people to connect and create memories around the table.

In that way you often have to think beyond the immediate, investing in ideas that create enduring value instead. In an industry constantly chasing what’s next, staying true to your own story requires conviction. Authenticity becomes your greatest differentiator, because while trends fade, genuine experiences endure.

When someone takes one of my JAN products home, they aren’t simply making a purchase; they’re collecting a small part of the journey that inspired it.

Creating something with lasting value means designing with purpose rather than permanence in mind. It’s about making fewer things, but making them exceptionally well. The result is something that continues to tell its story long after it leaves the hands of its maker.
