Rice And Sultana Trail Mix

INGREDIENTS
200 g Spekko White Rice
30 g sunflower seeds
60 g pumpkin seeds
30 g coconut shavings
50 g cashew nuts
5 ml cinnamon, ground
1 ml nutmeg
2 ml all spice
60 ml honey
50 g cranberries, dried
METHOD
In a large pan, toast the rice until golden in colour without using any oil and set aside.
In a separate pan toast the sunflower seeds, pumpkin seeds, coconut shaving and cashew nuts together with all the spices.
Place the rice and toasted seed mixture in a tray and mix through the honey,
bake in a preheated oven of 180°C for 10 minutes and allow to cool down before storing in an airtight container.
Serve with yogurt or have ready for a snack.
