Prosecco and Lime Sorbet Float

PREPARATION TIME: 15 Minutes | COOLING TIME: 30 Minutes | FREEZING TIME: 6hours | YIELD: 1 Litre

INGREDIENTS 

250 ml water
250 ml sugar
500 ml lime juice, freshly squeezed
zest of 2 limes
Prosecco, chilled

METHOD

Place sugar and water i a saucepan over medium
heat and bring to the boil.

Boil until the mixture has a syrupy consistency, around
2 – 3 minutes. Remove from heat and allow syrup to cool completely. Add the rest of the ingredients, except Prosecco, to the cooled syrup, then pour into a container and freeze for at least 6 hours. Use a fork to stir the mixture every hour to break up the crystals which
will give the sorbet a smooth texture. Alternatively, use an ice cream maker to make the sorbet, following the manufacturer’s instructions.

Scoop balls of sorbet into chilled cocktail glasses and immediately pour the chilled Prosecco over the sorbet. Serve with long cocktail spoons.

Blue Martini

PREPARATION TIME: 5 Minutes | YIELD: 1 Cocktail

INGREDIENTS 

50 ml vodka
5 ml blue Curaçao
1 lime
slice of lime, for garnish

METHOD

Pour vodka and blue Curaçao into a shaker filled with ice.

Add the juice of half a lime.

Shake well and strain into a chilled martini glass.

Garnish with a slice of lime.
