Warm Berry Compote with Rose Water

This is a treat-yourself recipe. It’s so good you’ll want it with everything. I make the recipe double and keep some in the fridge to have with my yoghurt for breakfast… and of course if you are the daring type, serve it as a cold soup with a dash of cream for a perfect light dessert.

WARM BERRY COMPOTE WITH ROSE WATER

Makes about  1 ½ cups

INGREDIENTS

1 tablespoon butter

2 tablespoons castor sugar

1 vanilla bean, split in half

200g raspberries

100g cherries

100g strawberries – or a 400g pack of frozen mixed berries

2 tablespoons rose water

METHOD

Melt the butter and stir in the sugar.  

Do this on low heat.  

Add the vanilla bean and simmer lightly until the sugar has melted.

Add the berries and cook for about 3 minutes. Don’t overcook, as the berries will go soggy.

The berries should just be nice and soft.  

Add the rose water and give a good stir.  

Serve with yoghurt or vanilla ice-cream.
